Our dairy products start with fresh, Jersey milk. Our cows are grass-fed so their milk is high in Omega-3s. Our milk is low-grade vat pasteurized (meaning more good probiotics are left for your health) and non-homogenized (the cream rises to the top once you let milk sit for a spell). Our cows live outdoors, are on pasture during the warm season, and receive an abundance of forage year-round.

The process… Discover the magic behind our dairy products! It all starts early in the morning and again in the afternoon when we carefully milk our cows. The milk is warm at about 100 degrees Fahrenheit when it leaves the cow. Then, it goes through a special process. First, it's filtered as it enters a big tank and quickly cooled to a chilly 37 degrees in just 40 minutes. This cooling helps preserve the flavor.
Next, we gather enough milk for a batch. It's pumped from the tank into a 100-gallon vat pasteurizer in our creamery. It's warmed to 145 degrees and kept at that temperature for 30 minutes. This helps make sure our milk is safe to drink. If it's regular milk, we cool it again, bottle it up, and store it in coolers for you to find at your local store. But if we're making something special like kefir or yogurt, we cool the milk just right, add in a special culture, and let it sit until it's ready to be packaged and delivered to stores near you.
